PORK BELLY BURNT ENDS
Today I am going to share with you one of my all-time favorite recipes!
- 1 – 8-10 lb. pork belly
- Yellow mustard
- Rub/seasoning of your choice. I used MOJO RUB BBQ MAGIC
- Butter
- Brown sugar
- BBQ sauce of your choice. I used MEAT MITCH WHOMP SAUCE
Slice pork belly into 1 ½ - 2-inch cubes
Coat with a thin layer of yellow mustard
Coat with seasoning and allow to sit for 15-20 minutes
Place on a 250-degree smoker. Be sure all pork cubes are not touching
Smoke until internal temp of meat is at 195
Place in aluminum pan. Add more seasoning, brown sugar, pads of butter and BBQ sauce. Mix thoroughly and place back on 250-degree smoker uncovered
Continue to smoke until sauce is reduced and the sauce on the pork has set. Allow to cool 15-20 minutes
