Irish Flank Steak with Colcannon Potatoes

Ingredients

Marinade

  • 2 cups stout beer
  • 1 cup chopped pepperocini peppers
  • 6 cloves minced garlic
  • 2/3 cup soy sauce
  • 4 tbsp molasses
  • 2 tbsp worcestershire sauce
  • flank steak

Colcannon Potatoes

  • 2 lbs russett potatoes, peeled and cubed
  • 8 tbsp butter
  • 3/4 cup milk
  • 2 tbsp minced garlic
  • 1/2 cup bacon
  • 1 cup shredded green cabbage
  • salt and pepper to taste
  • 2 tbsp butter
  • chives

Instructions

Marinade

  • mix all ingredients until well combined
  • place steak in marinade

Colcannon Potatoes

  • boil potatoes until fork tender,drain and return to pot
  • add butter, mash potatoes
  • add milk and continue to mash potatoes until creamy
  • in seperate pan melt butter and add garlic, cook 5 minutes
  • add cabbage, cook until tender
  • add cabbage and bacon to potatoes, mix well
  • top with chives
