Sliders are definitely a staple around here! These Cheesy Chopped Beef Sliders are tops on the list! I mean how can you go wrong with ground beef, cheese and sautéed onions!? You pair that with a special sauce on top of a slider bun and you are set! These are perfect for parties, game day or just sit down and indulge yourself!
Ingredients

½ Cup of Mayonnaise

¼ Cup of Ketchup

1 Tbsp of Mustard

2 Tbsp of The W Sauce

2 Tbsp of Dill Relish
-
1 Tbsp of your favorite BBQ Rub ( I used my Aight Guys!! Smokey Sweet Rub )

1 Whole Vidalia Onion

2 Lbs of 80/20 Ground Beef
-
2 Tbsp of Olive Oil
-
Lane’s BBQ SPG
-
Lane’s BBQ Brisket Rub
-
4 Cups of Chihuahua Divided
-
8 Slider Buns
-
2 Tbsp Butter Melted
-
1 Tbsp The W Sauce

Directions

Combine all ingredients in a bowl, mix well and put in the fridge.

Preheat griddle top to medium/medium high heat.
Dice up whole onion.
Add olive oil and onions to griddle top. Season with Lane’s BBQ SPG and cook till translucent.
While onions are cooking, it’s time to season up the ground beef on all sides with some Lane’s BBQ Brisket Rub. ( Keep the ground beef in the same shape as it comes out of the package ).
Place ground beef loaf directly on the griddle top next to the onions and allow to build a nice crust on both sides.
Once you get a nice crust on both sides, chop ground beef up with a spatula and mix in sautéed onions. Allow to continue to cook until the ground beef is done.
Add 2 cups of Chihuahua Cheese to the hamburger and onion mixture and allow to melt. Remove meat, cheese and onion mixture, place in a bowl and set aside.
Take slider buns and put cut side down on griddle top and allow to toast.
Set your Camp Chef Pellet Smoker to 300 degrees and allow it to preheat.
Time to assemble your sliders! Place the bottom of the slider buns in a cast iron skillet and spread Special Sauce on top.
Next add 1 cup of chihuahua cheese on top of the sauce.
Take your hamburger mixture and add to the top of the cheese.
Add one more cup of chihuahua cheese to the top of the hamburger mixture.
Spread Special Sauce to the inside of the top of the slider bun and place on top of the slider.
Mix melted butter and W Sauce together in a bowl.
Brush butter and W Sauce mixture on top of slider buns.
Place pan of sliders into the Camp Chef and allow to cook for 25-30 minutes until cheese is melted and tops are golden brown.
Bring inside, let cool and dig in!
