Fresh Caught Fish Sandwich!

We grew up on a farm in Mississippi, so hunting and fishing were just a way of life.  So any chance I get to go visit my mom, I take it!  One of our favorite things to do is go to the lake, set out fishing poles and catch a mess of fish to clean and eat!  So this is exactly what this recipe is all about!  We caught a bunch of catfish and a fish sandwich was definitely on the menu!  So stick around and I'll walk you through how we made it!

There is something about fresh caught fish that just hits different!  I guess it's the fact that you actually catch them yourself, clean em and cook em up!  I mean fresh fried catfish is always a winner, but sometimes you want a little something different!  So for this one, we decided to blacken the catfish, make a homemade tartar sauce and toast up a brioche bun to put it on!  Talk about some fine eating!  Make you wanna slap yo mama!  Sorry Mom, but check this out and you'll understand what I mean!

Fresh Caught Blackened Catfish Sandwich!

Ingredients

    • 1 Cup of Mayonnaise

    • ½ Cup of Dill Relish

    • Juice from ½ Lemon

    • 2 Tbsp of Sugar

    • 2 Tbsp of Onion Powder

    • Salt and Pepper to taste

    • 2 Catfish Fillets

    • 2 Brioche Buns

    • 4 Slices of Tomoto

    • 2 Pieces of Butter Lettuce

    • 3 Tbsp of Melted Unsalted Butter

    • Lane’s BBQ Blackening Seasoning

    • 4 Pads of Butter

    Directions

      1. Pour all ingredients in a bowl, mix well and place in refrigerator for at least 1 hour.

      1. Preheat your cast iron skillet.

      2. Dry catfish off with paper towel and brush both sides with melted butter.

      3. Season both sides with Lane’s BBQ Blackening Seasoning.

      4. Place fish in hot cast iron skillet and cook for about 4 minutes on each side, or until it reaches an internal temperature of 145 degrees.

      5. Remove fish from pan and place on a wire rack.

      6. Toast your Brioche Buns with the pads of butter.

      7. Spread tartar sauce on bottom bun. Top with butter lettuce, fish and tomato. Season tomato with salt and pepper. Spread tarter sauce on top bun and place on top.

      8. Slice and ENJOY!
