It's finally beginning to feel like summertime outside, so that means it's time to go fishing and that's exactly what we have been doing! We loaded up on some catfish, so stick around and I'll show you what we did with 'em!

Aight Guys!! I have been fishing my whole life and it never gets old! We were lucky enough to catch a bunch of catfish, so a fish fry is what the doctor ordered. Instead of just an ole cornmeal batter, I decided to kick it up a notch and do a beer batter. Well let me tell ya, the crunch was out of this world! We decided to cut the fillets into smaller pieces and make fried catfish sliders. You pair that fried fish with a toasted brioche slider bun, lettuce, tomato and homemade tartar sauce and your taste buds will be doing the lambada in your mouth! Now let me show you how it'd done!

Ingredients
Tarter Sauce

1 - Cup of Mayonnaise

½ - Cup of Dill Relish

2 - Tbsp of Sugar

2 - Tbsp of Onion Powder
-
Juice of ½ Lemon
-
Salt and Pepper to taste
Sliders
-
¾ - Gallon of Vegetable Oil
-
8 - Slider Buns
-
4 - Catfish Fillets cut in half (depending on the size)

Butter Lettuce
-
Sliced Tomatoes
-
Salt and Pepper
Beer Batter
-
3 - Cups of All Purpose Flour Divided
-
1 - Cup of White Rice Flour
-
2 - Tbsp of Baking Powder
-
¼ - Cup of your favorite bbq seasoning
-
1 ½ - Pale Ale Beers (You might have to add a little more or a little less. I poured in 1 can, mixed it up and gradually added the 2nd can until I got to the consistency I wanted)
Directions
Tarter Sauce
Mix all ingredients together and place in refrigerator at least 30 minutes.
Beer Batter
Mix 2 cups of all purpose flour and the rest of the dry ingredients together and gradually pour in beer while stirring until you get to the consistency you want.
Sliders
Preheat vegetable oil to 375 degrees.
Take remaining cup of all purpose flour and place in a bowl.
Pat your catfish fillets down with a paper towel and make sure they are very dry.
Toss catfish fillets in flour and coat on all sides. Shake off excess flour and immediately dredge them into your beer batter.
From the beer batter, gently place fillets into hot oil and allow to fry for 5-6 minutes or until golden brown.
Once fish is done, place on a wire rack to drain and immediately season with salt or your favorite bbq seasoning.
Time to assemble your sliders. (I toasted my slider buns in a pan with butter)
So I added a piece of butter lettuce to the bottom bun, add a piece of fish, top with a slice of tomato, salt and pepper on the tomato, then finally add your tarter sauce to the top bun and place it on top.
Time to dig in and enjoy!
