Aight Guys!! Let's talk game day breakfast! Whether you are at the game tailgating or staying home doing homegating, this is the perfect way to start game day! Just think about it, a sweet pancake wrapped around a piece of smoked sausage and cheese and then dipped into a sweet and spicy dipping sauce! Come on! That combination of savory and sweet will have your taste buds popping out of your mouth! Talk about one tasty bite! Now let's get into it and I'll show you how to make em!
Ingredients

1 - Cup of All Purpose Flour

1 ½ - Tbsp of Sugar

¼ - Tsp of Salt
-
1 - Tsp of Baking Powder
-
¼ - Cup of Blue Plate Mayonnaise
-
¾ - Cup of Water
-
1 - Tsp of Vanilla Extract
-
1 - Lb of Conecuh Sausage cut into 4” sections

8 - Slices of American Cheese
-
1 - Cup of Hot and Spicy Blue Plate Mayonnaise

¼ - Cup of Maple Syrup

Dipping Sauce
Directions
Pancake Batter
Place all dry pancake batter ingredients in a bowl, whisk well and set aside.
In a separate bowl, add all the wet pancake batter ingredients and whisk together until well combined.
Now add your wet mixture into the bowl with the dry ingredients and stir in with a spoon. Don’t over mix your batter, there will be some lumps in there and that is totally fine.
Dipping Sauce
Add hot and spicy mayonnaise and maple syrup to a bowl, mix well and set in refrigerator until ready to serve.
Pigs in a Blanket
Turn your griddle top on to medium high heat and add your sausage links. Just keep rotating until they are nice and brown on all sides and completely cooked. Remove from griddle and place on paper towels to drain the grease.
Take a stick of butter and grease down your griddle top. Next add enough pancake batter to form a 5” to 6” round pancake.
Once your pancakes are done on one side, flip them over and add a slice of American cheese and a piece of sausage to each pancake.
Put on some insulated gloves and gently roll the pancake around the sausage and put it seam side down back on the griddle for a few more seconds to seal up.
Remove from griddle and place on a wire rack to cool.
Slice em up or keep them whole, plate em up, serve with the dipping sauce and dig in!
