Directions
Chuck Roast Sliders
Preheat Pellet Smoker to 275 degrees.
Cover both chuck roasts with Bear & Burton’s Fireshire on all sides and season generously with Lane’s BBQ Fiesta Seasoning on all sides.
Place chuck roasts in smoker and allow to smoke for 2-3 hours or until a good bark is formed.
Pour beef broth in a pan, place your 2 smoked chucks roasts in the pan with the broth, add all of your pads of butter on top of the chuck roasts, toss your peppers and onions on top, season with more Fiesta seasoning, cover with foil and back on the smoker. Allow to cook until the meat is fork tender. Mine took another couple of hours. Remove from the smoker and allow to rest for about an hour.
Remove chuck roasts from the liquid and shred them up. Add in peppers, onions, W Sauce and provolone cheese and mix well. Place in a covered pan and back on the smoker until the cheese is nice and melted.
Spread Kewpie Mayonnaise on the top and bottom of your toasted slider buns and put as much of the meat mixture on there as you desire and cap em off with the top buns.
Serve your sliders with a side of the au jus that your chuck roast cooked in. Dig in and enjoy!
Recipe Note
You can add anything else you want to the sliders such as jalapeños or pickles!
