My kids like legs and breasts, my wife likes breast and wings and probably my favorite would be a good ole thigh. Thighs are just hard to beat. They are always so juicy and flavorful whether you're are grilling, smoking, baking, BBQing or even frying them. Now stick around and I'll show you one of our favorite weeknight meals!

Aight Guys!! There is something about a good ole chicken thigh that just hits different. Now most of the time I am BBQing or smoking them, but I decided to mix it up a little bit and do some lemon pepper chicken. That juicy chicken thigh with that crispy skin seasoned up good with lemon pepper and a bite of that rich saffron rice that just cuts that lemon flavor is just out of this world good! This is the perfect weeknight family meal. Now let me show you how we made it!

Directions
Lemon Pepper Chicken with Rice
Preheat pellet smoker to 310 degrees.
Take your chicken thighs and pull the skin away exposing the chicken meat.
Season chicken on both sides with salt and pepper. Next coat good on both sides with lemon pepper. Wrap the skin back around the chicken and seasoned outside of skin with salt, pepper and lemon pepper.
Place chicken thighs skin side down in a room temp cast iron skillet.
Place skillet of chicken on the pellet smoker and allow to cook for an hour.
After that hour mark, flip the chicken over where the skin is on top. Crank the pellet smoker up to 400 degrees and cook for another hour or until it’s golden brown and the skin is crispy.
Once you flip your chicken, now is a good time to get started on your rice. Make as much rice as you want and cook according to package.
When everything is ready, plate it up however you wish. I placed my rice in a small cast iron skillet and placed the chicken thighs on top. Time to go in for that bite! Dig in and enjoy!

You can use this recipe for really any pieces of chicken you want, I just prefer thighs. Also, when you are making your rice, I substituted chicken broth for the water....just makes it a little more rich!
