Aight Guys!! Let's talk fresh corn on the cobb! I myself love it just grilled with butter, salt and pepper, but wanted to try something a little different on this one. So just think char grilled corn cut off the cobb and mixed with different cheeses, heavy cream, butter, sugar and sautéed veggies, topped with sugar and bruleed! You wanna talk about sweet savory deliciousness! Now let me show you how we did it!

It is officially summertime and that means summertime recipes! Fresh corn is always a hit at our table, but let's mix its up a bit and make it a little savory and sweet! Now come along and I'll show you what we made!
Ingredients
Grilled Corn Brûlée

6 - Fresh ears of corn on the cobb shucked

2 - small onions diced

3 - multicolor sweet peppers diced

1 - block of cream cheese softened

1 - cup of heavy cream
-
2 - Tbsp of unsalted butter
-
2 - Tbsp of white sugar
-
1 - cup of shredded cheddar cheese
-
⅓ - cup of cotija cheese
-
2 - Tbsp of your favorite All Purpose seasoning
-
¼ - cup of white sugar set aside
Directions
Grilled Corn Brûlée
Start off by grilling your corn until you have a good char color on all sides. Bring inside and allow to cool.
In a skillet add a tbsp of butter, onions and sweet peppers and allow to sauté for about 5 minutes.
While the onions and peppers are sautéing, cut your corn off the cobb and it to your skillet along with another tbsp of butter and continue to sauté.
Now add your cheeses one at a time making sure to mix well. Continue adding in your heavy cream, seasoning and sugar until everything is well combined.
Once everything is combined, remove from heat and allow to cool to room temperature.
Take your remaining ¼ cup of sugar and spread evenly over the top of your corn in the skillet.
Finally, take your Rocket Fire Torch and brûlée the top until you have a nice golden brown. Allow to cool for a few minutes for the sugar to harden and form a crust.
Impress everyone by cracking your spoon into that hard sugar coating and dig in!

If your corn mixture gets too thick, add in a little heavy cream until you get to the consistency you like.
You can also serve these in individual ramekins so everyone has their own brûlée!
