Irish Flank Steak with Colcannon Potatoes

Aight Guys!! It’s time for the Olympics!! So this month, FoodSaver® wanted us to come up with an Olympic inspired dish. So after a lot of research and thinking, I came up with an Irish Marinated Flank Steak with Colcannon Potatoes! Don’t let the name fool you, it’s not a complex dish, but definitely a tasty one!!
First off, let’s mix our marinade in the FoodSaver® Preserve & Marinade Container. Once you have all the ingredients for the marinade into the Preserve & Marinade Container, mix it all up well. Now let’s toss the Flank Steak in and make sure to flip it all around to cover all sides. Now, place the top on the Preserve & Marinade Container and marinade for 12 minutes! Yep, 12 minutes and you are done!
When the 12 minutes is up, dry the steak and season with your favorite Beef Seasoning.
Nothing left but to throw the Flank Steak on the Grill! This is a hot and fast cook, so I had my Grill sitting at around 500 degrees. I grilled it for around 3-4 minutes per side. I also had some of the marinade I had reserved to baste the Flank Steak with when I flipped it over.
While the Flank Steak is coming up to temp, let’s get started on those Colcannon Potatoes. (I had no idea what these were until I started researching a side dish for the Flank Steak). Basically, it’s boiled potatoes with milk, butter, salt & pepper. But the cool part is that you fry some bacon and crumble it up, then in a skillet, melt butter, garlic and shredded cabbage! Yes Cabbage….who knew! So boil your potatoes, add butter, milk, salt, pepper, the sauteed cabbage and garlic and crumbled up bacon. Mix everything together and top with Chives!
Once the Flank Steak hits your desired internal temperature, pull it off the grill and allow it to rest for about 5 minutes. I pulled mine at 125 internal temperature. Once the steak has rested, time to slice it up! We served our meal family style, which basically means throw everything onto the cutting board and dig in! The Preserve & Marinade Container blew my mind this time! I would have bet money that the steak had been marinating 24 hours or longer! The flavor throughout the steak was insane and it was only in there for 12 minutes! That Flank Steak paired with those Colcannon Potatoes was a freaking awesome meal that I would highly recommend!
After everyone is through hogging it in, cleanup is simple! Throw all the leftovers in the FoodSaver® Preserve & Marinade Container, vacuum seal it up and toss it in the fridge for later!
Ingredients
- 2 cups stout beer
- 1 cup chopped pepperocini peppers
- 6 cloves minced garlic
- 2/3 cup soy sauce
- 4 tbsp molasses
- 2 tbsp worcestershire sauce
- flank steak
- 2 lbs russett potatoes, peeled and cubed
- 8 tbsp butter
- 3/4 cup milk
- 2 tbsp minced garlic
- 1/2 cup bacon
- 1 cup shredded green cabbage
- salt and pepper to taste
- 2 tbsp butter
- chives
