I know everyone has seen the Viral Flying Dutchman from In-N-Out floating around. So I decided to mix it up a little bit and not do a burger! I mean how can you go wrong with chicken, bacon, cheese and grilled onions with a little homemade Boom Boom Sauce!?

Grilled Chicken Flying Dutchman!

The internet has gone bonkers over this Viral Flying Dutchman from In-N-Out Burger which is a dang good burger, just messy! So I figured why not put a spin on it and do grilled/griddled chicken on it? Next time I will probably cut it down to one piece of chicken instead of two, but go big or go home right? It's still extremely messy, but it is one tasty bite! The combination of the grilled chicken, bacon, American cheese, pepper jack cheese, grilled onions and boom boom sauce is out of this world! As my buddy Rodney would say, it would make a puppy pull a freight train!
Ingredients

½ Cup of Mayonnaise

1 Tbsp Sriracha Hot Sauce

2 Tbsp Hot Honey
-
1 Chicken Breast
-
Lane’s BBQ QNami Seasoning
-
1 Whole Vidalia Onion
-
4 Slices of Bacon
-
2 Slices of American Cheese
-
2 Slices of Pepper Jack Cheese
Boom Boom Sauce
Sandwich
Directions
Boom Boom Sauce
Mix all ingredients together in a bowl and set in the fridge.
Sandwich
Slice up your onion into 3/8” thick slices.
Slice your chicken breast in half lengthwise.
Season both pieces of chicken on all sides with Lane’s BBQ QNami Seasoning.
Preheat your griddle top to medium/medium high heat and place your 4 slices of bacon on the griddle and cook until crispy.
Next add 2 slices of onions as well as the 2 chicken breasts to the griddle. Cook chicken to an internal temp of 165 degrees and cook the onions till translucent and good caramelization on both sides.
Time to assemble! Place a slice of American cheese on each chicken breast.
Now add 2 slices of bacon on top of the American cheese.
Drizzle your boom boom sauce all over the bacon on both pieces of chicken.
Finally add a slice of pepper jack cheese to each piece of chicken.
Now place one piece of chicken on top of one of the onion slices, place the second chicken breast on top of the first one and finally cap it off with the other slice of onion.
Now get your bib on and dig in!
