I love sandwiches and I love fish, so a Poboy is the perfect fit! Growing up in the south, catfish was always readily available. The good thing about catfish is that it is very versatile in that you can fry it, bake it or even blacken it. So for this particular sandwich, I chose to fry it. So come along and I'll show you how we made it!

Fried Catfish Poboy!

It's hard to beat some good ole fresh caught fried catfish! So for this one, we kept it simple by cutting the catfish up in nuggets with a cornmeal coating and fried em up. Made up a little remoulade sauce, added that to some soft crunchy bread piled high with those catfish nuggets, lettuce and diced tomatoes. You pair that with some crispy homemade French fries and you have yourself one heck of a meal!

Ingredients
Remoulade Sauce

½ Cup of Mayonnaise

1 Tbsp of Fresh Lemon Juice
-
I Tbsp of Sweet Pickle Relish
-
½ Tbsp of Smoked Paprika
-
2 Tbsp of Dijon or Creole Mustard
-
1 Tsp of Lane’s BBQ One Legged Chicken Hot Sauce
-
1 Tsp of Lane’s BBQ Signature Seasoning
-
1 Tsp of Prepared Horseradish
Catfish Poboy
-
4 Catfish Fillets cut into nuggets
-
1 French Baguette or whatever bread you choose
-
1 ½ Cups of Yellow Cornmeal
-
1 Tbsp of Corn Starch
-
Lane’s BBQ Signature Seasoning
-
2 Russett Potatoes cut up into French Fries
-
Peanut Oil or Canola Oil for frying
-
1 Tomato Diced
-
2 Cups of Shredded Lettuce
Directions
Remoulade Sauce
Place all ingredients in a bowl and mix well. Toss in the fridge until you are ready to assemble your poboy.
Catfish Poboy
Take your fresh cut French fries and soak them in cold water for 20-30 minutes to draw out some of the starch. Be sure you dry them very well before you are ready to put them in the grease to fry.
Add yellow cornmeal, corn starch and some Lane’s BBQ Signature Season in a bowl and mix well.
Take your catfish nuggets and add them into the cornmeal mixture and get them coated well. Place your battered catfish nuggets on a wire rack until you are ready to fry.
Get a cast iron skillet and pour enough oil in there for frying, turn the burner on and let it heat up till it reaches around 365 degrees.
Place your dried French fries in the great and allow them to fry until they are golden brown and crispy. Once they are done, remove from the grease and place on a wire rack and immediately season with Lane’s BBQ Signature Seasoning.
Allow your oil to reheat back up to 365 degrees and drop your fish nuggets in. Fry until they are golden brown and crispy. Remove from the grease and place on a wire rack and immediately season with Lane’s BBQ Signature Seasoning.
Time to assemble! Cut your bread in half and spread a good layer of the remoulade sauce on both sides of the bread. Pile as much of that fried fish on there as you can, add a handful of shredded lettuce, some diced tomatoes and season with Lane’s BBQ Signature Seasoning. Cap that baby off, slice it in half, serve with a side of those homemade fries and dig in!
