Chicken thighs are always a staple at our house and we are constantly looking for new things to do with em. So we were eating pizza one night and had the idea to stuff em with cheese and pepperoni and turn it into a sandwich. Well let me tell ya, it turned out to be one amazing sandwich. Now let me show you how I did it!

I have been on a chicken thigh kick here lately and love trying new things with em and this one did not disappoint! We stuffed those chicken thighs with cheese and pepperoni and wrapped em in bacon. Toasted up some brioche buns, added some pizza sauce and topped it off with more cheese and pepperoni on top! Talk about making your taste buds do the happy dance! It made for one AbsolutelyfreakinKiller Bite!
Ingredients

4 Boneless Skinless Chicken Thighs

Shredded Mozzarella Cheese

30 - 40 Pepperoni Slices

Pizza Sauce
-
2 Brioche Buns
-
4 Pads of Butter
-
Aight Guys!! AbsolutelyFreakinKiller AP Rub

4 Slices of Thin Cut Bacon
Directions
Set up your grill for cooking indirect and preheat to 350-375 degrees.
Take your chicken thighs and season both sides with my Aight Guys!! AbsolutelyFreakinKiller AP Rub.
Sprinkle on a layer of cheese, then add a layer of pepperoni and roll your chicken thigh up nice and tight getting everything tucked in good.
Wrap your chicken thigh with a piece of bacon and use a couple Grill Pinz (or toothpicks) to hold the bacon in place and season the outside with my AP Seasoning. Repeat this process for all 4 chicken thighs.
Place the chicken this on the indirect side of the grill and allow to cook until the bacon has rendered down and crispy and the chicken hits an internal temperature of at least 165 degrees.
Once your chicken is done, remove it from the grill and bring inside to rest.
While your chicken is resting, toast up your brioche buns in a skillet with the pads of butter until they are golden brown.
Take your top bun and flip it over where the toasted side is facing up. Add a layer of Mozzarella cheese then 4 slices of pepperoni and another layer of cheese on top and place them on the grill for the cheese to melt.
While you are waiting on the cheese to melt, slice up your chicken into whatever size slice you want.
Time to assemble! To the bottom bun, spread a layer of pizza sauce. Then add as much chicken on there as you like. Season the chicken with my AP Seasoning, add a little more pizza sauce and top with Mozzarella cheese. Take your torch (I am using my Rocket Fire Torch) and melt the cheese. Now place the top bun on with the cheese and pepperoni facing up. I torched the top a little bit as well to give it a little color. Slice in half and dig in!
