There are so many different things you can do with pork belly! There is pulled pork, carnitas, BLT's and anything in between! I decided to keep it simple by slicing it up, throwing on a skewer and hit it with an amazing glaze!

Directions
Pork Belly
Set up smoker to 250 degrees. I am using my Camp Chef Woodwind Pro with a couple lumps of Jealous Devil Maxx Briquettes and hickory wood chips in the smoke box for extra smoke.
Take your pork belly slab and cut it in half width wise.
Take the 2 pieces of pork belly and slice the width wise into ½” to 2” strips.
Use Bear and Burton’s Breakfast Sauce as a binder and coat all pieces of pork belly really well and allow to sit 10-15 minutes to soak in.
Season pork belly strips on all sides with Hot Totty BBQ Crew Sweet Chipotle Seasoning.
Put a skewer in each piece of pork belly lengthwise.
Place pork skewers into smoker and allow to smoke for an hour.
After the first hour flip pork skewers over and allow to continue to smoke for another hour. Looking for an internal temp of around 200 degrees and fork tender.
While pork skewers are smoking, place all ingredients for the BBQ Glaze in a sauce pot, mix well and allow to heat up and simmer for a few minutes.
Once your pork is fork tender, brush the BBQ Glaze one side of the pork, flip over and glaze the other side and finally sprinkle a little more of the Hot Totty BBQ Crew Sweet Chipotle and allow to smoke for an additional 10-15 minutes.
Bring inside, garnish with the sliced up green onions and dig in!
