Chicken is one of those proteins that are usually readily available and fairly cheap. One of our favorite ways is to smoke a whole chicken. You can just eat it just like it is or take the chicken off the bone and use it for other dishes. A lot of times we will pull it off the bone, vacuum seal it and freeze it for later. It's excellent for chicken pot pie, chicken spaghetti, chicken casserole and anything in between. For this recipe, we were thinking party foods, so sick around and I'll show you how we did it!

Aight Guys!! Are you ready for an awesome appetizer/snack to carry to your next get together? Well I have got you covered! These Smoked Cheesy Chicken Bombs are sure to be a hit! I mean how can you go wrong with smoked chicken, smoked cream cheese and shredded cheese all mixed together and stuffed inside a dinner roll? I will say, be sure to make plenty because they will disappear right before your eyes! Now let's get into it and I'll show you how we make em!

1 - Block of Cream Cheese

12 - Frozen Dinner Rolls

1 - Cup of shredded Colby Jack Cheese

Lane’s BBQ Signature Seasoning

Chopped Parsley for Garnish

2 - Eggs beaten

2 - Tbsp Melted Butter

Directions
Smoked Chicken Bombs
Take your frozen dinner rolls, spray a container with cooking spray, lay your rolls out in the container and let thaw and proof according to package.
Preheat smoker to 250 degrees.
Rub your chicken down with olive oil and season with Lane’s BBQ Signature seasoning on all sides. Place chicken in the smoker and allow to cook until done reaching an internal temperature of at least 165 degrees.
After your chicken has been smoking for about 30-45 minutes, place a block of cream cheese on some aluminum foil and score the top. Season with Lane’s BBQ Signature seasoning and in the smoker for about an hour.
Once your chicken is done, bring inside and let it rest for about 15-20 minutes and the pull all the chicken off the bone and shred it.
Add smoked cream cheese and Colby Jack cheese to the shredded chicken, mix well and season with Lane’s BBQ Signature seasoning.
Take a dinner roll and place a ball of the cheesy chicken mixture inside and close up all the edges so it doesn’t leak.
Place bombs on parchment paper and brush with the beaten eggs. I lined the smoker with parchment paper and placed the bombs on the smoker and cook till they are golden brown. These took around 20 minutes.
Bring your bombs inside, plate em up and immediately brush them with melted butter, top with my Aight Guys!! Smokey Sweet Rub, a little parsley and it’s time to go in for that bite baby! Dig in and enjoy!
