Of course there are many different variations you could try, so stick around and I'll show you this one!

Aight Guys!! College Football and food go hand in hand! So there is nothing we love better than filling up our house with people and cooking up some good food. We are all about some snacks and finger foods around here and I know cheese dip is always on the menu. So cheese dip just kind started out as velvet and rotel melted together. Then we evolved with adding different cheeses and condiments to it and smoking it, which was a game changer. Well now we gotta make it even better right!? So why not a smoked surf and turf queso by adding in chopped up ribeyes and shrimp! Talk about a game changer to your tailgate food! Be sure to add this to your next tailgating adventure and Roll Tide! Now let's get into it and I'll show you how we made it!
Ingredients

2 - Ribeye Steaks

1 - Pound of Raw Large Peeled and Deveined Shrimp

2 - Lb Block of Velveeta Cheese Cubed

1 - 1 Lb Block of Pepper Jack Cheese Cubed

1 - 8 Oz. Block of Cream Cheese Cubed

1 - 1 Lb Block of Sharp White Cheddar Cheese Cubed

1 - Can of Rotel Original
-
½ - Cup of Sliced Pickled Jalapeños

Lane’s BBQ Signature Seasoning
-
Lane’s BBQ Brisket Rub
-
Aight Guys!! AbsolutelyFreakinKiller AP Rub

The W Sauce
-
Olive Oil
-
Chopped Parsley for Garnish
Smoked Queso Dip
Directions
Smoked Queso Dip
Add all the cheese, rotel and jalapeños to a pan and season with Lane’s BBQ Signature Seasoning and place into a 250 degree smoker.
Season ribeye steaks using The W Sauce as a binder and season with Lane’s BBQ Brisket Rub on all sides.
Add your shrimp to a pan and drizzle with olive oil and season them good with my Aight Guys!! AbsolutelyFreakinKiller AP Rub.
Once queso has been smoking for 30 minutes, add the ribeye steaks to the smoker and stir up your pan of queso getting everything mixed together.
After another 30 minutes, add the pan of shrimp to the smoker and allow to smoke an additional 15 minutes or until shrimp are done. I cooked my steak till medium/medium rare. ( Cook your steak to your desired doneness)
Once everything is done, bring the queso, shrimp and steak inside. Allow the steak to rest for a good 5 minutes and cube it up into small bite sized pieces and cut the shrimp up the same way. (Leave a few shrimp whole for garnish as well as some of the diced up steak).
Add diced up shrimp and steak to the queso and mix up good. Place some diced up steak and your whole shrimp to the center of the pan of queso for garnish and finally sprinkle the pan with chopped parsley.
Now get your favorite chip or even a baguette and dig in!
