If you go to most BBQ Joints, they have smoked chicken. In my opinion, there is smoked chicken and then there is SMOKED CHICKEN! Well down here in Alabama, we do things a little different thanks to my good buddy Chris Lilly at Big Bob Gibson's! He created an Alabama White Sauce that has become a staple in Alabama. The sauce is really different than most sauces...it has a twang to it that pairs incredibly well with smoked chicken!

Smoked Chicken with Alabama White Sauce

Smoked Chicken with Alabama White Sauce has become a staple around here! I like to take a whole chicken and cut it into halves, season it up, smoke it and dunk the whole half chicken in that white sauce! The white sauce is a mayonnaise based mixed with apple cider vinegar, horseradish, lemon juice and lot of other goodies! I'm not sure what it is, but it pairs extremely well with that smoked chicken! It's kinda hard to explain the flavor, but if you know you know!
Ingredients

2 Cups of Duke’s Mayonnaise

⅓ Cup of Apple Cider Vinegar

¼ Cup of Apple Juice

2 Tsp of Prepared Horseradish
-
½ Tsp of Cayenne Pepper
-
½ Tsp of Garlic Powder
-
Juice from ½ of a Lemon
-
Kosher Salt and Cracked Pepper to taste

2 Whole Chickens

Olive Oil

Directions
Alabama White Sauce
Combine all ingredients in a bowl, mix well and set aside. It’s better if you make it the night before and put it in the fridge so all the flavors can marry together.
Smoked Chicken
Take your 2 whole chickens and cut them in half so you have 4 chicken halves.
Coat each chicken half good with olive oil.
Season all 4 chicken halves with my Aight Guys!! AbsolutelyFreakinKiller AP Rub on all sides. Make sure you get up under the skin as well.
Use whatever smoker you have and set it at 275 degrees and smoke until each chicken half reaches an internal temperature of at least 165-175 degrees. I am using a Southern Pride Rotisserie Smoker.
Once chicken is done, bring it inside and let it rest about 5 minutes.
Only thing left to do is to take each chicken half and dunk it in that Alabama White Sauce making sure to cover the entire bird.
Slice your chicken up the way you like and dig in!
