Smoked Sausage, Egg and Cheese Deep South Dumplings!

Let's talk breakfast! These smoked sausage, egg and cheese breakfast dumplings will cure what ails ya! I mean how can you go wrong with smoked sausage, egg and cheese stuffed inside of a rolled out canned biscuit!? You top it with a little of the Bear and Burton's Breakfast Sauce and you are in for one heck of a treat!

¼ Cup of Heavy Whipping Cream

1 Can of Pillsbury Grands Biscuits

3 Cups of Cheddar Cheese Divided

3 Tbsp of Melted Butter

Lane’s BBQ Everything But The Bagel Seasoning

Breakfast Dumplings
Directions
Breakfast Dumplings
Preheat your pellet smoker to 225 degrees using cherry wood for the smoke.
Place a wire rack over the top of a cast iron skillet and put the 2 lbs of breakfast sausage on the wire rack (still in its log shape) and let it smoke for an hour.
After an hour of smoke, add the sausage into the cast iron skillet, place on a hot burner and finish cooking the sausage by breaking it up in the cast iron skillet.
Whisk up eggs and heavy cream and season with Aight Guys!! AbsolutelyFreakinKiller AP Rub.
Add eggs to the sausage the cast iron skillet and allow to scramble stirring often. When eggs are almost done, add in 1 cup of shredded cheddar cheese, remove from heat and mix until cheese is melted.
Open your can of grands biscuits, take a rolling pin and roll out each individual biscuit as flat as you can.
Crank your pellet smoker up to 350 degrees and allow to preheat.
Pour enough of the melted butter into a cast iron skillet enough to cover the bottom.
Time to assemble! Take a biscuit, add some cheddar cheese on the bottom, then a layer of the sausage mixture, another layer of cheese and ever so gently grab the edges of the biscuit and bring them together to form your dumpling. Be sure to pinch and seal it good so none of that goodness leaks out. Repeat this process for all 8 biscuits.
Take your biscuit dumplings and place in the cast iron skillet with the butter and arrange them in a circle where they are touching each other with one in the middle. Brush your dumplings with butter and season the top with Lane’s BBQ Everything But The Bagel Seasoning.
Place your cast iron skillet with the dumplings in the pellet smoker and allow to cook until golden brown. (Mine took around 25-30 minutes)
Once they are golden brown, bring inside and allow to cool for a few minutes. Take one of your dumplings, break it in half and pour some of Bear and Burton’s Breakfast Sauce and Breakfast Sauce Too inside and dig in!
