Butterflied BBQ Chicken Legs!

So how do we kick the classic chicken leg up a notch you might ask? This method right here is a game changer for the classic chicken leg. Basically you run your knife down the bone of the chicken leg and butterflying the meat away from the bone. This allows for more surface area for your seasoning, it lays flat so you get a more consistent cook and it allows the chicken to char up and get more of those crispy edges that we all know and love! So for your next get together, try these out and you will not be disappointed!
Ingredients

1 - Cup of Duke’s Mayonnaise

2 - Tbsp Red Wine Vinegar

1 - Tsp Minced Garlic

Kosker Salt

Black Pepper

8 - Chicken Legs

Aight Guys!! AbsolutelyFreakinKiller AP Rub

Aight Guys!! Bama’s Smokey Sweet Rub

Sweet BBQ Sauce

Comeback Sauce
Mix All Ingredients together and place in refrigerator.
Chicken Legs
Take your chicken leg and with a sharp knife, run your knife lengthwise down the center of the bone. Now just start cutting the meat away from the bone and butterfly the chicken leg out.
Now time to season your butterflied legs. Rub the legs good with a little bit of olive oil all the way around. Once they are coated good, season with a base layer of Aight Guys!! AbsolutelyFreakinKiller AP rub on both sides of the chicken. Now add a layer of Aight Guys!! Bama’s Smokey Sweet rub on both sides and allow to sit while you set your grill up.
Set your pellet smoker to 350 degrees and allow it to preheat.
Once the grill is preheated, place your chicken skin side down and let them cook for 25-30 minutes. After your chicken has been cooking for about 30 minutes, flip them over and cook for an additional 20 minutes.
When the chicken hits and internal temperature of 165 degrees, glaze the chicken with your favorite bbq sauce and allow to cook for an additional 10 minutes.
Once the bbq sauce is set on the chicken, remove the chicken and place on a cutting board. Bring inside and garnish with some parsley.
Take your chicken leg, dunk in the comeback sauce and dig in!

If you like them to be a little more spicy, either use a sweet heat bbq sauce or just add some hot sauce in to your bbq sauce to give it a little kick!
