Summertime calls for simple and fresh snacks! So one of my all time favorite snacks to have is chicken salad! I decided to kick it up a notch on this one, so come along and I'll show you how we did it!

Aight Guys!! I know summertime is coming to an end and kids are going back to school, but there is still plenty of pool time and like time to be had! If your family is anything like mine, you gotta have snacks with you at all times. So one of our favorites is chicken salad! Whether you put it in a sandwich, wrap or just eat it with crackers, it always seems to be a hit. I decided to kick it up a notch with this one and smoke the chicken and smoke the pecans as well. Just imagine a chicken salad with smoked chicken, smoked pecans, red and green grapes, celery, mayonnaise and seasonings! Make you slap yo momma! Now let's dive into it and I'll show you how we made it!

Ingredients
Smoked Chicken Salad

1 - Whole Chicken

1 - Cup of Sliced Green Seedless Grapes

1 - Cup of Sliced Seedless Red Grapes

4 - Stalks of Celery Finely Chopped
-
1 - Cup of Pecan Halves
-
1 ½ - Cups of Mayonnaise

Directions
Smoked Chicken Salad
Preheat Pellet Smoker to 250 degrees.
Cover chicken with olive oil and season all sides with my Aight Guys!! AbsolutelyFreakinKiller AP Rub and place in the smoker.
Allow chicken to cook for at least 2 hours or until it reaches an internal temperature of 170 degrees.
Once the chicken is on the smoker, add your pecan halves to a cast iron skillet and place in the smoker with the chicken. Allow pecans to smoke for 20-30 minutes stirring often. Once the pecans have a nice color, remove them from the smoker, allow to cool and chop them up to your desired size.
Once chicken is done, bring inside and allow to cool. Pull chicken off the bone and place in a food processor. Allow to pulse until the chicken gets to the consistency that you like.
In a big bowl, combine chicken, red grapes, green grapes, pecans, celery and mayonnaise. Stir to combine everything really well and taste it. Keep adding my Aight Guys!! AbsolutelyFreakinKiller AP Rub until you get to the taste you want. Cover with plastic wrap and place in the refrigerator for at least 30 minutes to an hour.
I served mine 2 different ways. One just in a bowl with your favorite crackers. Then I took some sweet rolls, toasted them in butter and stuffed the chicken salad inside. Now dig in and enjoy!
