Aight Guys!! This concoction came about by cleaning out the fridge. So we had some boneless skinless chicken thighs, smoked sausage and bacon that we needed to cook. So why not combine everything and make something spectacular? So we decided to fire up the grill and get to cooking! Stick around and I'll show you how we made these tasty treats!

Bacon Wrapped Cheesy Smoked Sausage Stuffed Chicken Thighs!

We love playing around and creating new things to try and this one right here did not disappoint! I mean I love me some chicken thighs, so why not stuff them with cheese and smoked sausage and wrap in bacon!? Top that with a little sweet bbq sauce and you have one of the best bites in bbq! The combination of everything worked perfectly and definitely needs to be on your to do list!
Ingredients

4 Boneless Skinless Chicken Thighs

4 Slices of Bacon (not thick cut)

2 Slices of Provolone Cheese cut in half

4 Pieces of your favorite smoked sausage cut into 2” links

Pit O’ Heaven Bacon Butter Garlic Pitgrit Seasoning

Aight Guys!! Smokey Sweet Rub

Lane’s BBQ Kinda Sweet BBQ Sauce
Directions
Preheat your pellet smoker to 275 degrees.
Season your chicken thighs with Pit O’ Heaven Bacon Butter Garlic Pitgrit on both sides.
Lay a slice of cheese lengthwise on your chicken thigh and add a sausage link horizontal in the middle of the cheese and roll your chicken thigh up around the sausage. Repeat this process for all chicken thighs.
Take a slice of bacon and wrap securely around each rolled up chicken thigh and pin it into place using your GrillPinz. (You could always use toothpicks if you don’t have GrillPinz). Season the outside of the bacon with my Aight Guys!! Smokey Sweet Rub.
Place chicken thighs on smoker and allow them to cook until they reach an internal temperature of around 160 degrees. Remove the chicken thighs, toss in a bowl and cover them good with Lane’s BBQ Kinda Sweet BBQ Sauce.
Once your thighs are coated good, place them back on the grill for an additional 15 minutes so the sauce has time to tack up.
Bring em inside, let cool for a few minutes, slice them babies up and dig in!
