Grilled Mahi with a Grilled Corn Salad!

When it comes to summertime meals, I always think of all the fresh veggies that come from the garden! So for this recipe, I decided to utilize those fresh veggies and pair it with some grilled fish. It's such a light and refreshing meal that packs a ton of flavor. I chose Mahi Mahi as my fish, but any white flaky fish will do. Grilling the veggies add an extra depth of flavor as well. The combination of the two will have your neighbors peeking over the fence and the flavor is off the charts!
Ingredients

4 - Ears of Corn

1 - Yellow Squash

1 - Zucchini

1 - Small Pack of Multi Colored Cherry Tomatoes

2 - Avocados

1 - Lime

¼ - Cup of Olive Oil

3 - Tbsp of Lane’s BBQ Chili Lime Seasoning

¼ - Cup of Olive Oil

2 - Tbsp of Minced Garlic
-
Zest of 1 Whole Lime
-
Juice of 1 Whole Lime
-
2 - Tbsp of Honey
-
1- Tsp of Smoked Paprika
-
1 - Tsp of Salt
-
½ - Tsp of Pepper

Lane’s BBQ Chili Lime Seasoning
Grilled Corn Salad
Mahi Marinade

Directions
Grilled Corn Salad
Grill Corn on the Cobb until charred and cut off the Cobb.
Cut Zucchini and squash into quarters, coat with olive oil and season with Aight Guys!! AbsolutelyFreakinKiller AP Rub.
Grill a couple minutes per side, bring inside and chop into pieces.
Slice Cherry Tomatoes in half.
Dice up 2 Avocados.
Add corn, squash, zucchini, tomatoes, olive oil, the juice of 1 lime and Lane’s Chili Lime Seasoning into a bowl and mix well. Taste and adjust seasoning as needed.
Gently fold in avocado, place Saran Wrap over the top and place in the refrigerator.
Mahi Marinade
Combine all ingredients and mix well.
Grilled Mahi
Place Mahi Fillets in Marinade for at least 1 hour.
Pull Mahi fillets out of marinade and pat dry. Season generously with Lane’s BBQ Chili Lime Seasoning.
Preheat your grill grates to 500 degrees, spray good with oil and sear your fish off for 3 minutes per side or until the fish is 145 internal temperature.
Time to plate this dish up! Pile a good helping of the grilled corn salad on your plate or cutting board and place the grilled Mahi on top of the corn salad. Dig in and enjoy!
