Pork is a staple around here and the way prices are, these country style pork ribs are the way to go! One of my favorite ways to prepare them is turning them into pulled pork. To do this, you have to smoke em, then wrap-up up and braise them for a few hours. The process is a little long, but trust me, it's worth the wait! You take that pulled pork, put it on a butter toasted croissant topped with an asian inspired slaw and you got one heck of a sandwich! The sweet and savory combo is out of this world!
Ingredients

1 - Bag of Tri Colored Slaw

½ - Cup of Mayonnaise

¼ - Cup of Sugar

¼ - Cup of Teriyaki Glaze
-
1 - Pack of Country Style Ribs (mine had 6 ribs)

Yellow Mustard

Aight Guys!! AbsolutelyFreakinKiller AP Rub

Aight Guys!! Smokey Sweet Rub

1 - Cup of Apple Juice
-
½ - Stick of Butter cut into pads

¼ - Cup of Brown Sugar

¼ - Cup of Sweet BBQ Sauce

Candied Jalapeños

Butter

Directions
Coleslaw
Combine all ingredients in a bowl, mix well and place in refridgerator.
Country Style Ribs
Preheat pellet smoker to 250 degrees.
Place country style ribs in a pan and coat good with yellow mustard and season the ribs with a base layer of my Aight Guys!! AbsolutelyFreakinKiller AP Rub and then add on a layer of my Aight Guys!! Smokey Sweet Rub and allow to sit about 15 minutes while the grill preheats.
Place ribs on smoker and allow to smoke for 2 ½ to 3 hours.
After they smoke, place in a pan with apple juice, butter, brown sugar, bbq sauce and some more of my Aight Guys!! Smokey Sweet Rub. Cover with foil and place back in the smoker until they are probe tender. That’s usually around an internal temp of around 205 degrees. Place the pan in a Cambro or dry cooler and allow to rest for an hour to an hour and a half.
After the rest, drain some of the juices out and shred pork.
Pork Sandwich
Toast top and bottom of your croissant in a skillet with butter.
Time to assemble! Pile as much of the pulled pork on the bottom of the bun as you want. Top the pork with coleslaw and add CANDIED JALAPENOS because you know we gotta have em! Cap it off with the top bun and dig in!

When you assemble your sandwich, you can add sriracha mayonnaise to the buns and you could also add more bbq sauce to the pork if you like!
